EXECUTIVE CHEF

Located in the vibrant heart of fashion district of Milan, The Carlton, opening in 2025, will have 71 rooms and suites, a restaurant, a wellness center and an exclusive garden lounge with an amazing view of the city. Designed by Olga Polizzi in collaboration with Paolo Moschino and Philip Vergeylen, the interior will combine tradition and modernity, delivering an authentic Milanese experience. Situated in a prime location overlooking Via della Spiga, renowned for its luxury boutiques, and just a few steps from Via Montenapoleone, The Carlton is set to become the new landmark of the fashion district.

 

Main purpose:

As Executive Chef, you will be responsible for overseeing kitchen operations for both The Carlton and Rocco Forte House, Milan while maintaining a very high level of food standards for our Guests and a safe and inspiring work environment for the staff.

Reports to: Hotel Manager.

 

Main duties & responsibilities:

·        Responsible for the Kitchen department management and organization. He/she will ensure that the Team will consistently work following our standards and procedures setting departmental objectives in line with hotel objectives;

·        Supports our Corporate consultant, Fulvio Pierangelini, in modifying and engineering menus for all outlets including bar, in room dining, staff canteen, amenities, banquets and events;

·        Responsible for selection, appraisal and professional training and development of kitchen staff, including pastry and stewards. Responsible for talent management, acting as a coach and trainer for all the kitchen staff; Responsible for staff time keeping and rotas of the kitchen;

·        Creates and maintains relationship with all F&B outlets Managers;

·        Acting as Chef for culinary classes for Guests;

·        Be informed on new trends in line with Guests needs.

·        Supports our Corporate consultant, Fulvio Pierangelini, in choosing the providers and change them according to changes in food offer in alignment with hotel management;

·        Develops an operating budget for the Kitchen department revenue, costs, staffing and all necessary equipment, monitoring and taking corrective actions to help assuring that budgeted sales and cost goals are attained.

·        Performs administrative duties as per H&S requirements. Comply with nutrition & sanitation regulations and safety standards;

·        Responsible for the status, the integrity and the maintenance of all the kitchen equipment;

·        Cooperates with all the other Managers in order to achieve Hotel goals and to provide the best personalized experience to our Guests.

Other requirements:

·        Broad knowledge of regional cuisine and products with suitable experience of working with fresh ingredients;

·        Previous experience in the same role in prestigious working environments;

·        Fluent Italian and English;

·        PC literate.
